Almond Butter Chocolate Chunk Cookies

Yield: 20 – 1/2 ounce cookies
Ingredients:
• 1 large egg
• 1/4 teaspoon salt
• 1 cup almond butter
• 1/2 cup light brown sugar or coconut sugar
• 1/3 cup dark chocolate chunks
• 1/2 teaspoon almond extract, optional
Instructions:
Step 1:
Preheat oven to 375 degrees and line 2 baking sheets with parchment paper.
Step 2:
Whisk the egg and salt in a medium bowl. Stir in almond butter, brown sugar, chocolate chunks
and almond extract until well combined.
Step 3:
Place slightly rounded tablespoons of dough (1/2 ounce) on the prepared baking sheets
spacing 2 inches apart. Use a fork to flatten each cookie in a crosshatch pattern. Reshape the
edges into a circle if needed.
Step 4:
Bake 1 baking sheet of the cookies for 8-10 minutes until set and lightly golden. Let cool on the
baking sheet for 5 minutes and transfer to a wire rack to cool completely. Repeat with the
remaining cookies.
